The 2023 rosé is sourced from our vineyard that grows on steep south-facing sloops in decomposed granite soils. It was a wet winter, and the vines relished the extra moisture producing very healthy and heavy clusters. Harvested in early September and early October, each grape varietal was kept separate during the winemaking process to preserve their distinct qualities and allow for a decision on the final blend. To ensure the retention of acidity and freshness in the wine, the grapes were whole cluster pressed to stainless steel with no skin contact where they slowly cold fermented, and then aged until the final blending and bottling.
Food Pairing:
Because wine is such a great accompaniment to food, we suggest this crisp GSM Rosé would make a delicious aperitif or it can be paired with lighter summertime fare such as grilled salmon or chicken. It is also an excellent accompaniment to spicy Asian cuisine and curried vegetarian dishes. Please pass the wine as my mouth is on FIRE!
